Here you can savor Lonesome Dove’s signature BBQ sauce on Texas boar ribs. How about elk? Options include elk-Foie gras sliders with sweet blueberry jam and the elk loin, where the berries are candied alongside broccolini and parsnip puree. There is also a rabbit-rattlesnake sausage which errs more on the lean rabbit side and is seasoned to perfection.
